white christmas chicken chili

The weather is turning colder and the leaves are almost gone.. that can mean only one thing.  It’s soup season!  There is nothing I love more than a big pot of soup on a cold, rainy day and this is one of my favorites. 

This recipe started out as White Chicken Chili but I just felt like something was missing.  It needed some personality!  Some zip, some spice.  I decided to add a couple cans of Rotel & it made all the difference in the world – it also added pretty colors of red & green to my otherwise boring soup.  It’s not exactly healthy, thanks to the addition of sour cream & whipping cream – but don’t leave them out.  I promise they take the soup to a whole new level of deliciousness!

Ingredients
  1. 1 lb Chicken Breast
  2. 1 tablespoon Vegetable Oil
  3. 1 medium Onion, chopped
  4. 1 teaspoon Garlic Powder
  5. 2 cups Chicken Broth
  6. 2 cans (15.5 oz) Great Northern Beans, rinsed & drained
  7. 2 cans Rotel Tomatoes with Green Chiles
  8. 1 can (4 oz) Chopped Green Chiles
  9. 1 teaspoon Salt
  10. 1 teaspoon Cumin
  11. 1 teaspoon Dried Oregano
  12. 1/2 teaspoon Black Pepper
  13. 1/4 teaspoon Cayenne Pepper
  14. 1 cup Sour Cream
  15. 1/2 cup Whipping Cream
Instructions
  1. Heat oil in a large pot. Saute onion until translucent. Add the garlic power, chicken breasts & chicken broth. Bring to a boil, then reduce heat & simmer until chicken is cooked through (about 20 minutes). Once chicken is done, remove chicken to a cutting board & shred using 2 forks. Return shredded chicken to pot.
  2. Add beans, Rotel, chiles and remaining seasonings. Bring to a boil. Reduce heat and simmer uncovered for 30 minutes. Remove from heat and stir in sour cream and whipping cream.
Tips
  1. To reduce spice level, use chopped tomatoes instead of Rotel. Alternatively, you can spice it up by using Hot Rotel or adding additional Cayenne Pepper.
  2. We like to serve our Chili with Tortilla Chips and homemade guacamole.
